Phil’s 21 Roasted Halibut
A simple roasted halibut recipe with bright lemon, olive oil, and the bold flavor of Phil’s 21. The seasoning adds color, warmth, and depth without overpowering the fish.
Ingredients
4 halibut fillets, about 6 oz each
2 tablespoons olive oil
2 tablespoons Phil’s 21 Spice Rub
1 lemon
2 tablespoons butter, melted
2 tablespoons chopped fresh parsley or cilantro
Lemon wedges, for serving
Directions
1. Preheat the oven.
Heat oven to 425°F.
Line a baking sheet or shallow baking dish with parchment paper for easier cleanup.
2. Prepare the halibut.
Pat the halibut fillets dry with paper towels and place them on the prepared baking sheet.
Brush each fillet lightly with olive oil.
3. Season generously.
Sprinkle Phil’s 21 evenly over the top and sides of each piece of fish, pressing the seasoning lightly onto the surface.
Squeeze the juice of ½ lemon over the fish.
4. Roast.
Roast for approximately 10–14 minutes, depending on the thickness of the fillets, until the halibut is opaque and flakes easily with a fork.
For best results, avoid overcooking—the fish should remain moist and tender.
5. Finish and serve.
Drizzle the hot halibut with melted butter and a little additional fresh lemon juice.
Sprinkle with chopped parsley or cilantro and serve with lemon wedges.
