Phil’s 21 Grilled Corn

Sweet corn, smoky char, melted butter, and Phil’s 21 come together in an easy side dish that works especially well with grilled meats, seafood, or burgers. It’s similar to Mexican street corn but with a Phil’s twist!

Cook Time: 10–12 minutes
Serves: 4

Ingredients

  • 4 ears fresh corn, husks and silk removed

  • 3 tablespoons butter, melted

  • 1½ to 2 tablespoons Phil’s 21 Spice Rub – start with less then add more to your taste

  • 1 lime, cut into wedges

  • ¼ cup finely grated Parmesan cheese, optional

  • Chopped cilantro or parsley, optional

Directions

1. Preheat the grill.
Heat grill to medium-high.

2. Season the corn.
Brush each ear of corn with melted butter. Sprinkle generously with Phil’s 21, turning the corn so all sides are seasoned.

3. Grill.
Place the corn directly on the grill and cook for about 10–12 minutes, turning every few minutes, until the kernels are tender and lightly charred.

4. Finish with more flavor.
Remove from the grill and brush with a little additional melted butter.

Sprinkle with Parmesan, if using, and finish with a squeeze of fresh lime juice.

5. Serve.
Garnish with chopped cilantro or parsley and serve hot.

Phil’s Tip

For even more Phil’s 21 flavor, mix a little of the seasoning directly into the melted butter before brushing it onto the corn.

Phil’s 21 contains turmeric, which gives the seasoning some of its distinctive color and may naturally stain your hands or light-colored surfaces. Use a spoon, shaker, or gloves if you prefer to avoid the yellow color transfer.
