Phil’s 21 Scrambled Eggs
A fast, easy breakfast with more flavor than standard scrambled eggs. Phil’s 21 adds savory depth, garlic, and a little warmth without needing a handful of separate seasonings.

Ingredients
4 large eggs
1 tablespoon milk or cream
1 tablespoon butter
1 to 1½ teaspoons Phil’s 21 Spice Rub
2 tablespoons shredded cheddar, Parmesan, or feta, optional
Chopped chives, green onions, or parsley, optional
Directions
1. Whisk the eggs.
Crack the eggs into a bowl. Add the milk or cream and Phil’s 21, then whisk until well combined.
2. Heat the pan.
Melt the butter in a nonstick skillet over medium-low heat.
3. Cook gently.
Pour in the egg mixture. Let it sit for a few seconds, then gently push the eggs from the edges toward the center with a spatula.
Continue folding slowly until the eggs are softly set but still slightly glossy.
4. Add cheese, if using.
Sprinkle in the cheese just before the eggs are finished and fold gently until melted.
5. Serve immediately.
Transfer to a plate and finish with chopped herbs or a light extra sprinkle of Phil’s 21.

Phil’s Tip
Cook scrambled eggs over medium-low heat and pull them from the pan just before they look completely done. They’ll finish cooking from the residual heat and stay soft and creamy.
Phil’s 21 contains turmeric, which gives the seasoning some of its distinctive color and may naturally stain your hands or light-colored surfaces.
